Purpose Sonic Wave
Purpose Sonic Wave
Why cooking oil smells like fish?
How can I get rid of the smell of fish in the peanut oil I use to make donuts? Fresh oil, used once for this purpose ends up smelling awful and not reusable. All my ingredients are fresh, and we're talking donuts - not some fishy thing at all.
Can it be filtered or blasted with sonic waves? I need help here.
There's nothing you can do to get rid of the smell, but I'd take a close look at your donut recipe and your frying temperature. Peanut oil should be thermally stable enough to avoid decomposing, which means the oil is either way above its smoke point, or you're getting the smell as a by-product of decomposition of another oil that contains linoleic acid. If you're using something like canola oil in your recipe, that will leach out and decompose in the peanut oil, which will give that odor.
